Potassium Sorbate
Potassium sorbate is a mild preservative and the potassium salt of sorbic acid, used to control molds and yeasts in foods and cosmetics. Like sodium benzoate, it works best in mildly acidic products and loses strength as pH rises. This page covers what it is, how it works, its regulatory status, and why we use benzisothiazolinone instead.
